What is pastrami?
Pastrami is meat that has been brined, dried, seasoned, smoked and steamed. This winds up with a meat that is tender, soft, spicy, garlicky and wonderful. Pastrami has a texture uSnlike any other meat I've had, probably from the combination of brining then drying, then steaming.
In America, it is almost always made from beef, and is associated with Jewish delis. But it's origins are in Romania, where you can also get pastrami of pork or mutton. Lately, there have been things like salmon pastramil
It became associated with Jewish cuisine in America, because many Romania Jews immigrated to America, especially New York, bringing their food with them. Pastrami is probably the most famous Jewish Romanian dish. But there is also karnatzlach, which is garlic sausage.
Beef pastrami is absolutely delicious.
Serving pastrami
In America, anyway, there is one and only one classic way to serve pastrami: On a sandwich on rye bread with good sharp mustard. But there is no reason you can't eat pastrami plain. Some New York delis offer a "chef salad" that includes pastrami.
Some people put Russian dressing on pastrami. I find this appalling. Some people serve it on a French roll. There's no accounting for taste! And there are a variety of pastrami burgers, popular in Utah (of all places!) Phooey. Pastrami. On a plate or on rye bread. With mustard. Or plain. But with mustard. Pastrami and mustard go together like burgers and ketchup.
Pastrami and calories
I love pastrami. But I always figured it had a ton of calories. Not so! Pastrami is actually a lean meat.
1 ounce of pastrami has 41 calories, with only 15 of them from fat. That means that even a quite generous 8 ounces has only about 320 calories. That leaves room for matzoh ball soup!
That same ounce has 3 grams of protein, 2 grams of fat and no carbohydrates. It doesn't really have any vitamins to speak of; and it's not good for you if you're watching your salt.
But compared to salami (1 ounce 73 calories for beef salami, 95 for pork salami). pastrami is a dieter's dream.
