A Few Facts About Premium Unsalted Butter

According to PBS Test Kitchen there are guidelines for fat content in butter, "The USDA requires 80 percent butterfat; most European-style butters range from 81 to 86 percent." Cultured cream is another factor that affects the taste of butter. The cultures give the butter a tang that regular butter does not usually have. Premium butters can cost two to three times as much as regular butter that we buy at the supermarket. Premium butters are sold at high-end supermarkets.
