Peanut Butter Chocolate "Mookies" Recipe
Not Quite a Muffin, Not Quite a Cookie - the Mookie is Something Special in Between
You will need the following ingredients:
1/2 cup (1 stick) of softened butter or margarine
1/2 cup of well-packed light brown sugar
1/2 cup of granulated sugar
1/2 cup of creamy peanut butter
1 egg
1/2 teaspoon of vanilla extract
1 1/2 cups of all-purpose flour
3/4 teaspoon of baking soda
1/2 teaspoon of salt
About 40 miniature sized peanut butter cups
You'll need to start by preheating your oven to 375 degrees. Now, if your peanut butter cups are individually wrapped you'll really find it helpful to unwrap them and place them in a bowl. Line small muffin cups (the 1 3/4 inch diameter size) with paper non-stick baking cup liners.
Now the mixing begins! In a large bowl combine the butter, brown and granulated sugars, creamy peanut butter, egg and vanilla. Beat the ingredients together until they are nice and fluffy. In another large bowl, stir together the flour, baking soda and salt. You will now need to gradually add the butter mixture into this bowl, beating it until well blended.
Now you're ready to shape your dough balls. Shape your dough into balls that are approximately 1 inch in size. Place one in the center of each paper-lined muffin cup. Do not flatten the balls.
Bake the mookies for 10 to 12 minutes or until they are puffed and turning a light brown. Remove them from the oven and immediately press a peanut butter cup into the center of each mookie. The candy will melt into an ooey-gooey, oh-so-good, chocolaty - peanut buttery luscious lump.
WARNING: As tempting as it may be to grab that little goodie and pop it in your mouth, you must resist! Always allow your mookies to cool completely before serving them. If you have any leftovers, and note that I stress the "if" part, you can store them in an airtight container for a couple of weeks...but realistically, you'll probably never have to worry about having extras left over. Enjoy your mookies!
