Peanut Butter Cookies

During the holidays I have a favorite recipe I created and perfected on my own. I hope you give you all give it a try!

Ingredients:
11/2 cups of Peanut Butter (I used Jif, but any kind will work)
1 cup of sugar
1 egg
1 tsp. vanilla extract

Place all ingredients into a large bowl and mix with a fork, not a mixer. This makes the cookies more moist and tasteful. Once your mixture is thoroughly mixed together, then place just a tablespoonful onto a cookie sheet making ample room in between each circle. Take a fork and push gently in several directions before placing the cookie sheet in the oven. About 4 times to each cookie should be enough. Place in the over for 8-10 minutes at 350 degrees. Makes 16 cookies

When you pull them out they will be soft in the middle but they will harden up a little. You never want them too hard though.
Too add a new flavor add some semi-sweet chocolate morsels or even some cocoa to the mixture. I have tried both and both are very good!
