Lunches Pack a Punch Without Peanuts

Due to allergies or recalls many of us parents are scrambling to pack a nutritious lunch for our children. Having your child bring home their lunchbox home still half full is wasteful and frustrating.

This article gives several examples of lunches that the parents will love and the kids will eat.

Roll ups:

1 tortilla

1 tablespoon cream cheese

1 tablespoon jelly

Spread on the cream cheese, then jelly. Roll the tortilla up then cut either in half or several bite size segments. Place in container or cling wrap folded side down so they don't begin to unroll.Add some baby carrots in a baggie, a granola bar and juice box for a nice tasty lunch.

Backwards breakfast:

Serve your child lunch for breakfast to switch things up and fill their lunch box with breakfast food for an interesting twist that will fill them up.

Yogurt cup

Baggie with ¼ cup Cheerios, ¼ Fruit Loops, ¼ cup yogurt covered raisins makes great ''school gorp"

Complete this breakfast -for - lunch meal with a banana and juice box or bottle of water.

Ole!

Tortilla chips in baggie

½ cup mild salsa in screw tight thermos or reusable plastic container. ( I use the Ziploc containers and they work great)

String cheese (Monterey Jack or twist variety)

Slices of bell pepper.

Just add a juice box to this one and your child will say 'Gracias~" for the lunch!

Shapes

Tortilla spread with mayonnaise or mustard, thinly sliced ham on half of the tortilla

Cheese is optional.

Fold tortilla in half and slice into triangles.

Add cucumbers cut into circles and some square crackers with a rectangle shaped juice box and your

Child will think lunch is shaping up!

B.L.T-riffic!

Toast two frozen plain waffles. Let cool. Spread lightly with mayonnaise. Add a little lettuce, a couple slices

Of tomato, two or three strips of bacon for an awesomely tasty and filling BLT.

Baked chips or baby dills go great with this. Add a beverage and surely the lunchbox will come home empty.

Nature lover

Celery cut into 3 inch sections and spread with cream cheese. Dot a few raisins for the ants. Kids get a kick out of eating ants on a log. Cut cold broccoli for the trees, Goldfish crackers and Teddy Grahams for dessert. All you need to do is add a beverage and this outdoorsy lunch is out of sight.
