Pearl' s Moist Chocolate with Chocolate Frosting
Ingredients:
3 cups Cake Flour
2 1/2 tsp. Baking Soda
1 tsp. Cream of Tartar
1 cup Unsweetened Cocoa
4 Whole Eggs
1 1/2 cup Butter
2 1/2 cup Sugar
2 cups Evaporated Milk
1 tsp. Vanilla
Procedure:
1. In a large mixing bowl, cream butter until light and fluffy. Gradually add 21/2 cups sugar, beating until fluffy. Stir in vanilla.
2. Sift cake flour, baking soda and unsweetened cocoa together.
3. Add dry ingredients alternately with milk to butter-sugar mixture.
4. Beat combined mixture until smooth. Add 4 whole eggs and vanilla. Beat after each addition until smooth.
5. Pour to baking pan lined with greased paper.
6. Roast at 180 degree Celsius oven temperature for 20-25 minutes.
7. Prepare the frosting.
Chocolate Frosting
Ingredients:
2 tablespoons Unsweetened Cocoa
1/4 cup Evaporated Milk
3 tablespoons Butter
1 cup Confectioners' Sugar
1/2 teaspoon Vanilla
Procedure:
1. In a heat-resistant, non-metallic mixing bowl combine 2 tbsp cocoa and 1/4 cup milk. Add 3 tbsp butter.
2. Heat for 3 minutes until mixture boils. Stir occasionally.
3. Add confectioners' sugar to chocolate mixture gradually, beating at high speed on electric mixer. Beat until mixture is cooled. Add vanilla.
The Cake
Procedure:
1. Cut the cake crosswise making two layers. Arrange the first layer in a rectangular container. Spread half of chocolate frosting on top of the first layer as filling.
2. Arrange the second layer on top of the frosted first layer and spread thoroughly the remaining chocolate frosting.
3. Make desired lines to make the uppermost frosted layer of the cake attractive.
4. Decorate it with Cherries.
5. Serve my favorite.
