Pears with Berry Sauce

A Delicious, Healthy Dessert for Four

Ingredients:

4 ripe pears (medium size)

3 cups (750 ml) apple and blackcurrant juice (or another berry juice)

1 cup frozen mixed berries (thawed)

Vanilla ice-cream or low-fat yogurt

Wafer biscuits

Method:

Slice pears lengthwise, peel and core, leaving stems intact.

Combine pears and juice in a saucepan and bring to a simmer over medium heat.

Add the berries.

Place a round of baking paper over the pears to ensure they remain immersed in the juice.

Simmer for 10 minutes or until they are tender.

Transfer pears and berries to a bowl and cover to keep warm.

Boil the remaining juice until it reduces to about 1 cup (250 ml).

Serve pears and berries with a little juice spooned over.

Add ice-cream or yogurt and a couple of wafer biscuits to complete the dessert.
