Pennsylvania Dutch New Year's Tradition - Rueben Dip

Ring in the New Year with This Mouthwatering Appetizer!

As the title suggests, if you like Reuben sandwiches, this dip will rock your world. Pennsylvania natives or Pennsylvania Dutch believe good fortune comes to you and your family when pork and sauerkraut is the first meal consumed on New Year's Day. If you make the dish, don't forget the complimentary mashed potatoes!

Unfortunately for me, I am not big on pork. Red meat rocks! For those, like me, preferring beef over pork, try this Reuben dip variation on New Year's or anytime you're in the mood for kraut. I'm sure the tradition of pork and sauerkraut has evolved to include cownivores (yep, I made the word up).

Pennsylvania Dutch Rueben Dip Recipe
Heat oven to 350 degrees (F)

Ingredients:
½ lb. (8 oz.) Corned Beef, cooked and cut into bite-size
½ cup Sauerkraut* (drained)
1 cup Swiss Cheese, shredded
8 oz. Cream Cheese, softened

Either 2 tbsp. Thousand Island dressing OR: 6 oz. sour cream, 1 1/2 tbsp. ketchup, and 1 1/2 tbsp. spicy brown mustard

Crackers and/or rye bread squares**

Directions:
1. Mix all but ½ cup Swiss.
2. Pour into oven-safe dish.
3. Sprinkle remaining Swiss on top.
4. Heat apx. 20 minutes - until cheese is melted/lightly browned and dip is bubbly on sides.

Serve this yummy Rueben dip warm with crackers and/or rye bread squares.

* (Optional) Add 1-2 tbsp. sugar to tame the kraut taste.
** If you are a true Pennsylvania Dutch, you may want to try this dip over baked or mashed potatoes!!

    I'm from Pa and we ALWAYS had pork on New Year's Day, ever since I can remember and we still do it. As a matter of fact, I am getting ready to serve mine now. Happy New Year everyone!

    I'm from PA, and we always did eat pork on New Years Day. I am not familiar with this dip though. But it sounds great!

    Sauerkraut is great stuff, esp. on pork. But Russian dressing on Reubens never seemed right to me.
