Perfect Caramel Apples

Caramel Apples have always been something that reminds me off fall. I always have a few every autumn. These are definitely one of my favorite childhood treats! The prep time on this recipe is about 15 minutes and the cook time is about 15 minutes. Altogether, it shouldn't take you more than half an hour for you to make about 6 caramel apples. This is a really simple recipe as well.

What you need:

2 cups of sugar
¼ cup of light corn syrup
½ cup of water
6 apples
1 teaspoon vanilla extract
salt
pop sickle sticks
½ cup of heavy cream
2 tablespoons of unsalted butter
cooking spray
baking sheet
wax paper

Directions

Mix 2 cups sugar, 1/4 cup light corn syrup and 1/2 cup water in a small saucepan. Then, you need to bring it all to a boil on medium-high heat and make sure to keep stirring just until the sugar dissolves completely. Then cook, swirling the pan (you don't want to stir at this point), until the mixture is light amber color and your candy thermometer reads 320 degrees fare height. This shouldn't take more than 8 to 10 minutes. Once that is done, remove this from heat and very slowly whisk in 1/2 cup of heavy cream. Next, put in 2 tablespoons of unsalted butter and 1 teaspoon vanilla extract and a pinch of salt. Once that is all in there, put it all back on low heat and whisk it until everything is smooth. Let it cool until the caramel is thick enough to the apples. While you are waiting for that, put the sticks into the top of the 6 apples that you have and then dip each one into the caramel that you just made. Allow the extra to drip off of the apple. You can also roll the apples in toppings as well if you want too. Then once you're done, allow the apples to cook on the baking sheet that is covered with wax paper and cooking stray.
