Baked Apples and Eggnog French Toast

Out of ideas for a yummy Thanksgiving breakfast? Here is a festive breakfast that you can prepare and serve to the delight of all your guests.

Baked Apples with Grand Marnier

Scrub and core twelve apples. After removing the core and seeds place a tablespoon of butter into each core, with a sprinkling of cinnamon sugar and one teaspon of grand marnier liquer. Bake at 325 F until golden and then spoon a mixture of one half cup Greek honey yogurt, with two tablespoons pulverized nuts and one tablespoon grand marnier. Spoon onto each apple while still hot and serve.

Egg Nog French Toast

In a heavy skillet melt three tablespoons of butter. Slice a loaf of Challah or Sourdough bread, making sure that the slices are thick. Dredge each slice until absorbed in a bowl filled with eggnog. When the butter is nearly melted place slices of dredged bread in the pan. Cook until golden on each side before removing to a serving plate. Continue to add butter pats for each round of bread until you have prepared enough portions for all your guests (2 slices per person will be filling). Sprinkle ground cinnamon and confectioners sugar on each slice and serve with butter pats and syrup of your choosing.

Roast New Potatoes with Smoked Salmon

Scrub baby new potatoes of uniform size. Estimate four potatoes per person. Place in a roasting pan and roast for 15 to 20 minutes at 350 F, Remove from the oven and scoop out the top of each potato. Place a small dollop of sour cream in the top of each potato and then a small thin slice of smoked salmon before serving.

Garnish each plate with a thin slice of orange and a thin slice of lemon. Serve with coffee, tea or hot apple cider.

    Great article with some tasty ideas. Sure beats my homemade pancakes (although my kids'll love eating them while we watch the Macy's parade).
