Ingredients:
1 cup SALTED butter (frozen, refrigerated, or softened)
1 cup granulated sugar
1 cup chocolate chips
One batch makes enough for 10 people, and each batch takes 20-30 minutes to cook.
Directions: Microwave chocolate chips on medium for one minute, repeat until melted. Melting chocolate on the stove is pointless and the cleanup is a nightmare, so I always use the microwave. Heat chocolate until it is completely melted, and set aside for later.
Set out a couple overlapping sheets of non-stick foil on the counter to pour the melted toffee onto. This is the easiest and least messy method. Set aside for now.
Pour a small glass of ice-coldwater. Stick it by your stove.
Combine butter and sugar into a small or medium pot. Turn to medium heat, and begin stirring. The secret of this recipe? Stir, Stir, Stir. Keep everything moving until butter has melted completely. Once all the butter has melted, keep stirring but let mixture stand for a few seconds every 30 seconds or so. Eventually the mixture will start turning light brown.
Put a small dollop of the light brown mixture into the ice water. If it stays soft, then your toffee needs to cook some more. If the mixture turns hard, your toffee is ready. Turn of the heat, give the mixture one more stir, and pour it onto the non-stick foil. Be careful-mixture is HOT!
Wait about a minute and spoon melted chocolate onto hardening toffee. Spread chocolate around with a spoon over the toffee.
Stick the hardening toffee, still on the non-stick foil, in the fridge for 10-20 minutes.
Take toffee out of fridge, and break it up into small pieces (this part's fun!)
Packaging Toffee: Toffee left out in the air will eventually become a bit chewy, so be sure to package toffee in bags or containers, or make it right before it will be eaten. Toffee is great for parties, small get togethers, and as a homemade gift. It's especially popular during Christmas.
Why the salted butter?: Using salted butter keeps the melted butter and sugar from separating. Its okay if your mixture looks like its separating during cooking, if you used salted butter then just keep stirring.
The end result? A tasty, classic candy that leaves your friends begging for more!
