Perfectly Simple Chocolate Chip Cookies

This basic chocolate chip cookie recipe is based on the classic Tollhouse cookie recipe, but with a few alterations that guarantee great results every time.

Ingredients

Serves 10
2 1/2 cups unbleached flour
1/2 cup vegetable shortening
1/2 cup butter (1 stick)
3/4 cup white sugar
3/4 cup light brown sugar, packed
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
2 large eggs
2 cups Tollhouse chocolate chips

Directions for Perfectly Simple Chocolate Chip Cookies

Preheat oven to 375 degrees.

In a small bowl, stir together flour, salt and baking soda with a wire whisk, until combined.

In the bowl of a mixer with a paddle attachment, beat together shortening and shortening until completely combined and fluffy.

Add sugars and vanilla to the shortening and butter mixture. Mix well until fluffy again.

Add eggs to shortening mixture, one at a time, mixing until completely blended.

Add flour mixture slowly (I do it in about 3 parts), mixing until combined.

Stir in chocolate chips until evenly distributed.

Bake for 8-11 minutes, depending on the size of your cookies. For large, after-school-snack-worthy cookies, I use lumps of dough that are roughly the size of a golf ball, spaced generously on the cookie sheet, and bake them for about 10 minutes or until golden brown.
Tip
For the best baking results, I always use real vanilla - not vanilla-flavored extract. Once you taste the depth and richness that real vanilla adds to cookies, you'll never go back!
