Pie is one of those things that just doesn't get served every night. Reserved mostly for holidays and special occasions, apple, cherry, and other pies, are actually delicious any time. It's not like it takes all day to make a pie but, if you make it homemade, it takes quite awhile. And, even if you're just baking a frozen pie, it's nearly an hour to bake it, and even more time to let it cool. Stores sell single-serving pies, but the prices of those are now very high, especially if you have four or more people in the family. Look, if you're in the mood for pie, and you don't want to spend a lot of time or money to have it, just go get some biscuits. You can quickly turn them into blueberry pie, apple pie, and others.
You could mix up your own, homemade biscuits but, if you're trying to save time, that won't work. Just go get a roll of inexpensive biscuits and you'll have pies in the amount of time it takes to bake them. Don't use frozen biscuits for the pies since you can't manipulate them like you can with some other biscuits.
You know how, when you eat mashed potatoes and gravy, you have to make that indentation in the mashed potatoes, so that you have a little area for the gravy? You'll do something similar with the biscuits. Open the roll and lay all of the biscuits on a baking sheet, spacing them as you normally would to bake them. Then, make an indentation in each biscuit. Press down to make the hole, then press against the sides to make it a little larger.
If you're making apple pies, put a spoonful of the pie filling in the biscuit hole, and sprinkle it with cinnamon and sugar. If you're making cherry or blueberry biscuits just fill the biscuits with the fruit. Follow the instructions on the biscuits to bake them.
If you want to make chocolate or lemon pies, lay out the biscuits and make the indentations. Bake the biscuits, allow them to cool, and then put in the pie filling. It can be helpful to place a foil ball in each biscuit hole to help it keep its shape.
Some pies, like apple, blueberry, or cherry, are even better when you drizzle them with icing. Just put some powdered sugar in a bowl, stir in enough milk to make a thin icing, then drizzle it over warm biscuits.
