Pineapple Pie
2 pkgs. vanilla instant pudding (small box) -1 pint vanilla ice cream (softened) -2 cans pineapple in syrup (crushed) (15 oz cans) -1 cup milk -1 graham cracker pie crust -1 tsp. cornstarch -9
Mix pudding, ice cream and milk till blend (you can do by hand or with a mixer). Take and pour into the pie crust. Cover and set in the freezer.10
Open the pineapple and drain, saving the juice. Mix cornstarch and juice and put in a 4 to 6 cup kettle. Then add the pineapple and bring to a boil until the mixture thickens. (approximately 2 1/2 to 3 minutes).11
Cover kettle and put in the refrigerator for approximately one hour. The take spoonfuls and spread over the pudding and ice cream mixture. Cover again and chill for one more hour.12
When serving you may top it with cool whip. Also serve with some sugar cookies. For garnish you can use lemon or orange rind and a sprig of mintTip
I like to use vanilla pudding or New York Vanilla Pudding instead of the banana pudding. Also you can use a graham cracker crust if you like.

Post a CommentHmmm, wonder why your mouth burns from sweet potato.
I prefer pumpkin pie. Sweet potato pie tastes about the same, but it burns my mouth! Thankfully it is nothing life threatening!
Hope you had a good Shrove Tuesday/Mardi Gras if you celebrate! If not, hope you had a happy Tuesday and are having a good Wednesday!
