Easy Recipe for New Year's Eve

Everyone is so busy during the holiday season that it seems no one has the time to make or create interesting and tasty treats for friends and family. This recipe is one that I created based on a prepackaged product I viewed at a local grocery store. It only requires a few minutes and can be as healthy or decadant as you like. I will give the recipe using the ingredients that my family likes but you can experiment and use whatever you like.

Happy New Year Pinwheels

1 pkg. of Flour tortilla shells (soft)

1- 8oz. pkg. soft Cream Cheese

about 1/2lb. of sliced ham

about 1/2lb. sliced turkey (plain, smoked, baked or whatever flavor you like)

about 1/2 - 1lb. cheese (any flavor is fine. we enjoy colby, monterey jack and cheddar. Use one,some or all.)

1 C. shredded lettuce

1/2 C. diced tomatoes

1/2 C. thinly sliced Ripe Olives (my husband prefers the green olives instead)

Spicey brown mustard (optional)

Thinly spread cream cheese all over a totilla shell completely covering to the edges. Alternate meats and cheeses, top with lettuce, tomatoes and olives. Do not fold in ends but roll tortilla up into a cylander shape. Gently press it down to seal end. Cut into 1 1/2" sections. Eat and enjoy.

Another variation would be to add the spicey brown mustard ontop of the cream cheese or as my husband prefers, use Ranch Salad dressing instead of the cream cheese. Pimentos also add flavor and color to these delightful treats. My son enjoys helping me make these and his favorite way to make his is by taking shredded cheddar cheese and applying it first then microwaving the torilla shell for approximately 30 seconds ( you don't want the shell to get hard but you want the cheese slightly melted) then he adds his favorite toppings. He is a pickle lover so he usually adds dill pickles to his creation. That is what's so nice about these appetizer/snacks, you can put anything on them. They are also great as a "make your own" buffet treat. Your guests can line up to the counter or buffet and create their own pinwheels

Colored soft totilla shells are also a nice addition to the creation of this fun treat. So many times we find our buffet tables are only decorated with flowers and such we forget that the food can add color and creativity to the display as well. Arranging the pinwheels made from colored tortilla's on a pretty platter can make for an interesting, brite and creative centerpiece.

These also make for a great quick lunch and can be as nutritious as you want to make them. Enjoy and happy New Year!
