When I was a young child, my mother came across a recipe from a friend for "pizza casserole." It sounded like a sure hit, so my mom gave it a try. Sure enough, my sister and I, as well as my parents, were sold on the meal from then on. When asked what we wanted for our "birthday dinner", pizza casserole was always among the first words rolled off of the lips of my sister and me.
Now a couple of decades later, when I ask my children what they would like to have for their "birthday dinner", pizza casserole is one of their first choices as well. The pizza casserole recipe is an easy one to follow and is a great meal for the entire family to enjoy. Rather than always having pizza, the pizza casserole recipe puts a new twist on a family favorite. You can choose the ingredients according to your family's likes and dislikes. By this point, I am sure that I have sold you on this meal, so now I will tell you how to make your children's first response to the question, "What would you like to have for dinner?" be "pizza casserole".
Pizza Casserole
1 lb. lean ground beef
6 cups water
2 cups elbow macaroni
1 can Campbell's fiesta nacho cheese soup
1 jar pizza sauce
1 lb. shredded mozzarella cheese
1 package of pepperoni
salt
pepper
parmesan cheese
Optional Ingredients:
sliced black olives
diced green peppers
diced tomatoes
sliced banana peppers
sliced jalapeƱos
diced onion
1 jar sliced mushrooms
Preheat oven to 350 degrees.
Brown ground beef. Drain.
While browning ground beef, bring 6 cups of water to boil. Add elbow macaroni to boiling water and cook for only 4 minutes. Drain water.
Mix ground beef, elbow macaroni, 1 can Campbell's fiesta nacho cheese soup, 1 jar pizza sauce, and salt and pepper to taste. Also add any of the optional ingredients that your family enjoys.
Put mixture into a baking dish. Top with mozzarella cheese, pepperonis, and sprinkle on as much or as little parmesan cheese as you would like.
Bake at 350 degrees for thirty minutes.
Enjoy.
This meal can be enhanced with bread sticks and a salad, but is also great alone.
