Irish Potato and Apple Pudding

Monday is Saint Patrick's day and besides corn beef, potatoes and cabbage you might want to indulge in an Irish sweet treat. Here is one you may not have tried that will melt in your mouth. It is similar to apple pie

Potato And Apple Pudding
2 TBS Butter
8 oz Self-raising flour ( that is about 1 3/4 cups of flour)
6 oz Freshly mashed potatoes (about 2/3 cups)
4 TBS Milk
6 cooking apples, peeled, cored and sliced into pieces
1/2 Brown or white sugar (more if you like it real sweet)
1/2 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
Juice of 1/2 lemon
3 TBS Apple Cider

Mix the butter into the hot mashed potatoes, add a good pinch of salt, and the flour, and mix well, then add enough milk to make a soft, slack dough.

Roll out and line a 1-qt bowl with some of it, reserving enough for the lid.

Fill with the apples, peeled and cored and finely sliced, and sweeten to taste with sugar. Add the cloves, nutmeg and cinnamon, the lemon juice and the cider (or water), taking care not to make it too wet.

Dampen the pastry edges, lay the lid on and press down. Cover with foil and secure well.

Steam, or cook set in boiling water up to the rim, for 2 - 2 1/2 hours.
Serve cut in wedges with cream, home-made custard or ice cream

    Sounds delicious. I'm in Thailand, the land of the 'strange combinations' :-) Here we have sweetened 'flossy' pork served in rolls as snacks (the pork looks like carpet, and tastes even worse!), ice cream served with corn on bread (delicious), and mango dipped in a sweetened sauce made with fish (I kid you not!) So apples and potatoes sounds quite normal, LOL.

    We didn't have anything special.. except cake and ice cream. Seems like a strange combination.. but it might be interesting to try it. :D
