Potato Chip Cookies- Light & Crunchy! Use Crushed Chips Up

When my Aunt Char first told me she made potato chip cookies I reluctantly tried one. I couldn't believe how tasty and light they were! They now are one of my favorite cookies. Baking these cookies is also a great way to use up the smashed chips at the bottom of the chip bag.

2 sticks butter or margarine
Cream with 1/4 cup sugar
Add one cup of (crushed by hand) potato chips
1 3/4 cup of flour
1 tsp. vanilla

Grease cookie sheet. Take about one tablespoon of dough and form ball. (or more if you like larger cookies). Flatten cookies with a fork. Bake at 325 degrees for 10 - 15 minutes. Sprinkle with powdered sugar on each cookie.

At Christmas time I will put red and green sugar or sprinkles on top of the powdered sugar. Simple cookie to make for a cookie exchange!

    Wow, I've never heard of this before! It almost sounds like it couldnt be good, but then I think about take5 candy bars... and they are good! I'll have to check this out someday... and health it up with baked chips instead!

    I'm intrigued, have to see how the salty chips work. I assume you do use salted chips, right (they can be bought unsalted, too). I think the saltiness would add a great taste when combined with that sugar. :)

    I've never heard of these. We don't eat chips often, but I might get some just for this and add the chocolate chips, too. :-)

    These really sound great, but I never have those little crumbs at the bottom of the bag..I lick the bag clean. I have to share this recipe with my sis...They used to own a bakery and she made cookie crumb cupcakes. She'll love this idea.
