Potato Latkes

Potato latkes are a delicious part of Hanukkah. After wishing everyone a Happy Hanukkah 2009 and sharing Hanukkah 2009 Music Including Adam Sandler Hanukkah Song, I had to talk about yummy potato latkes.

I remember my mother making homemade potato latkes years ago served with applesauce and sour cream. They melted in your mouth and there never seemed to be enough to go around.

Today we enjoy eating potato latkes whenever we have the urge thanks to convenience foods. We love Dr. Praeger's potato pancakes in the frozen food section. They are easy to make and taste great. The Dr. Praeger potato pancakes that include broccoli or spinach are irresistible.

I'll admit when I make potato latkes, I use the Manischewitz potato pancake mix. I saved my mother's recipe for chicken soup but I am reluctant to tell her I misplaced the one for potato latkes. Whenever I cook from scratch, I refer to the Better Homes and Gardens Cookbook. BHG has a recipe for potato latkes that sounds really tasty if I get motivation.
