Potato Soup

Mary Wensing Dvorachek
3 cups milk ( your choice of milk, skim, 2 % or whole, also can use half and half)

2 cups water

2 small onion (minced) ( I use dried minced onions)

3 medium potatoes (cubed and cooked)

½ tsp. Sugar

3 Tbsp. Butter

1 cup cheddar cheese (shredded)

3 Tbsp. Flour

pepper

1 cup ham (cubed) or bacon (cut up and fried) we prefer bacon

Take the potatoes and wash, peel and cube, then cook until tender. Next drain potatoes, saving the potato water.

Take 1 cup of the potato water adding the water called for in the list of ingredients. Put aside.

Prepare your onion. Then melt the butter and add the onion and cook until the onion looks transparent. Add flour and pepper cook approximately 3 to 4 minutes, add potatoes, and rest of potato water mixture, onion, milk and sugar mixing thoroughly. Add cheese, ham or bacon. Simmer approximately 30 minutes Stir often.

Triple the ingredients for a large batch of soup.
