Great Potato Soup Recipe for a Cold Winters Evening!

This Potato Soup recipe has warmed my family up in the cool months of the year for quite a few seasons now; everyone asks for it on those cold evenings! It is a quick and easy potato soup recipe that I actually converted from a clam chowder recipe that a coworker gave me years ago. It tastes great both ways!

Potato Soup

5 -6 small potatoes

2 carrots

8 slices of bacon

1 small onion

1 can evaporated milk

2 cups milk

corn starch

2 cans drained minced clams - optional for making Clam Chowder

Cube the potatoes and carrots into the size you desire and boil for 20 minutes in salted water.

Dice the onion and fry it with the bacon that has been cut into bite size pieces,

Drain most of the water off of the potatoes and carrots and add the cooked bacon and onions. If you

are making your recipe into Clam Chowder then add the clams now too, if not, ignore.

Stir in the milks and bring to a boil.

Add corn starch to thicken and season to taste with salt and pepper.

Simmer on low for 5 minutes

Goes great with Oyster crackers or corn muffins right out of the oven! Enjoy!!
