Potatoes with a Twist

8 small potatoes (about 1 1/2 inches in diameter)

1/2 cup shredded sharp cheddar cheese
4 slices center cut bacon
1/2 cup water
2 Tbsp. Zesty Italian dressing

Peel and cook potatoes with water in microwaveable dish, uncovered on High for 10 minute or until tender. Let stand 5 minutes. Meanwhile cut up and cook bacon until it is crisp, drain on paper toweling(make sure a dish is under the paper toweling). Drain potatoes, take potatoes and put on cutting board. Use a small disk or glass to flatten each potato to 1/2 inch thickness. Heat dressing in fry pan on med heat, add potatoes, cook about 4 to 6 minutes or until the bottoms are golden brown. Turn potatoes over and sprinkle with cheese and bacon. Put cover on your fry pan, and cook and additional 2 or 3 minutes until the cheese is melted.

You can also use light or low fat ingredients and also Turkey bacon

    This sounds tasty, apart from the addition of bacon. I'm not a big fan of bacon.
