Potluck Dishes with No Leftovers

Here are recipes I have taken to potluck dinners with no leftovers to bring home. From the Entree to Dessert find fast easy recipes here!

Entree: Red Beans and Rice with Sausage

  1. Family Size box of Zattarains Red

    Beans and Rice

  2. Can of diced tomatoes
  3. Smoked Sausage (I've used bun

    size, turkey or pork)

Prepare the Red Beans and Rice as directed on the package. Slice and quarter the sausage in small bite size pieces. Saute sausage in a skillet with a little cajun seasoning. Add tomatoes and sausage, put in crock pot o keep warm and you're done. Cost about $6.00

Entree: Chicken & Dumplings

1. Bag of Frozen Chicken Tenders

2. One bunch of Celery, cleaned and sliced

3. 6 Carrots sliced or diced

4. One Package of Mary B's frozen dumplings (usually with the bread in the freezer section of the grocery store)

Fill large pot with water, add celery, carrots and chicken tenders and boil until chicken is cooked thoroughly. About 30 minutes. Remove chicken and dice. Add dumplings and cook according to package directions, add chicken and serve or place in a crockpot to travel and keep warm.

Side Dish: Twice Baked Mashed Potatoes

  1. Casserole of Mashed Potatoes

    (Homemade, frozen or Instant)

  2. Butter
  3. Onions
  4. Sour crème
  5. Shredded Cheddar Cheese

Prepare mashed potatoes as you prefer. Saute onions in butter and add to potatoes. Add a carton of sour crème to the potatoes. Top with cheddar cheese and heat in a 350 degree oven until heated through and the cheese is melted. Cost: about $6.00

Dessert: German Chocolate Bundt Cake

  1. Butter Pecan Cake Mix
  2. Tub of Caramel Pecan Frosting

Prepare cake mix as directed. Stir tube of frosting into the cake mix. Pour into greased and floured bundt pan and cook according to the cake mix directions. It will probably take about 10-15 minutes longer than recommended on the cake mix box. Let cool about 15 minutes and remove from pan. Men in particular love this cake, and it's not messy to eat. Cost about $4.00

Snack: Fire Crackers

1. One Box of Saltine Crackers

2. One Package of Dry Italian Dressing Mix

3. 1/3 c. vegetable oil

4. 1 teaspoon red pepper flakes

Carefully place crackers in a large bowl. Pour oil over cracjers, sprinkle with dressing mix and pepper flakes. Gently toss the crackers to distribute the seasoning. Place in a ziplock bag. These are best if made the day before serving.

Snack: Easy Candy Bar Mix

For a mix that tastes like a Payday candy bar: Mix equal parts of Candy corn and salted peanuts.

For a mix that tastes like a Snickers candy bar: Mix equal parts of Autumn Corn (The candy corn with a chocolate band) and salted peanuts

These mixes are fast and easy and will always get eaten, no matter how much you make.
