The following casserole, I've made several times for different potlucks. It is very versatile and you can substitute if you don't have one of the ingredients on hand. My kids really like it. It's a good dish to sneak vegetables into their diet. I hope you enjoy it as much as we have.
Vegetable Noodle Casserole
1 can (10-¾ ounces) condensed cream
of chicken soup, undiluted
1 can (10-¾ ounces) condensed cream
Of mushroom soup, undiluted
1-½ cups milk
2 cups of shredded cheese (I use a mixture
of Mild Cheddar and Monterey Jack)
Garlic salt to taste
2 tablespoons dried parsley flakes
½ teaspoon pepper
¼ teaspoon salt
1 package (16 ounces) wide egg noodles,
cooked and drained
1 package (16 ounces) frozen broccoli,
cauliflower and carrot blend, thawed
1 can whole kernel corn, drained
1 small onion chopped
Chop onion and put in small bowl with water. Cook in microwave for about 1 ½ minutes until onions are done. Cook noodles and drain. In a very large bowl, mix cream of chicken and mushroom soups with milk. Make sure all of the clumps are out of the soup. Pour in noodles and vegetables, stir together. Next, add 1- ½ cups of shredded cheese, onion, garlic salt, parsley, pepper and salt to the bowl. Mix everything together until mixed thoroughly. Pour into a greased 13-inch x 9-inch x 2-inch baking dish. I always end up with more than enough to fit, so I put the extra into a greased 8-inch x 8-inch baking dish. Sprinkle the remaining shredded cheese on top of the baking dishes. If you really want it cheesy, add more. Cover the dishes and bake at 350 degrees for 45-50 minutes or until heated through. This Vegetable Noodle Casserole will yield 12-14 servings.
Substitution suggestions:
You can substitute Cream of Broccoli soup for the Cream of Mushroom soup. You can substitute grated Parmesan cheese for part of the mild cheddar cheese. You can also substitute 2 cups of frozen corn for the can of corn. You can also add cut up cooked chicken to the Vegetable Noodle Casserole to turn it into a main dish.
My family always asks me to make this for potlucks. This Vegetable Noodle Casserole has always been a big hit for me. Try it and see what you think.

I don't know how I missed this before but I want to try it. Our potlucks always seem heavy on main dishes but nothing with veggies in them. This ought to work well for filling that gap!
