Preparing a Nawabi Omelet

An Omelet from Lucknow

The city of Lucknow is associated with Nawabs and grandeur. This has permeated to their cuisine where even ordinary dishes are given a touch of class to put them apart from a normal dish.This is the hallmark of royalty. One such adaption is what is termed as Nawabi or Lucknowi omlet. It is an excellent dish and very easy to prepare. For this you will need the following items.

a) Two eggs
b) Two medium sized onions chopped fine
c) Two green chillies chopped fine
d) A couple of grated cashewnuts.
e) A few raisens
f) Two table spoons of cooking oil or butter.
g) A non stick pan.
b) Salt and pepper to taste

As a start put the onions, chillies , grated cashew nuts and raisens in a greased non stick pan and ligtly fry them. Take them of the flame when the onons are slightly browned and keep aside. Take the two eggs and break them in bowl and fry them just as you fry the eggs . Take them off once the eggs are half fried. Take the mixture of onionand other ingradients and spread it evenly on the eggs. Add salt and sugar to taste .

You will now have what is termed as a Nawabi or Lucknowi omlet. It is a simple adaption of the normal english fried eggs. It is easy to make and can serve the purpose of a light snack or as a dish for breakfast. This dish normaly serves one person but you can any number of omlets for any number of persons.
You can have variation of this dish by spreading sliced ham or chicken also on it. The varieties are endless.
