Pumpkin Bars

Mary Wensing Dvorachek
1 can pumpkin
2 c. sugar
1 c. canola oil
2 cups flour
1/2 tsp. salt
2 tsp. cinnamon
4 eggs
2 tsp. baking powder
1/2 tsp. ginger
1 tsp. baking soda
1/4 tsp. cloves
1 cup raisins (optional)

Mix together and beat eggs, granulated sugar, oil and pumpkin until smooth. Stir in flour, baking powder, cinnamon, baking soda, salt, ginger and cloves. Stir in raisins (optional). Spread in pan lightly greased and floured jelly roll pan

Bake at 350 degrees for 25 to 30 minutes or until light brown. Cooling completely for approximately 2 hours.
Cream Cheese Frosting

1 tsp. vanilla
1 (3 oz) pkg cream cheese (soften)
1/3 c. butter or margarine, softened
2 c. powdered sugar
1/2 c. chopped walnuts (optional)

Beat cream cheese, butter and vanilla on low speed until smooth. Slowly add powdered sugar - 1 cup at a time, on low speed until smooth and spreadable.

Spread frosting over bars. Sprinkle with walnuts. Store in refrigerator.

***(use all ground spices)

***To Decorate : Top with your favorite Halloween, Thanksgiving or Holiday Candy
