Pumpkin Bread and Pumpkin Pudding Recipes

Great for Your Thanksgiving Dinner!

Using pumpkin in Holiday recipes is very popular. Pumpkin bread can be eaten as an appetizer, with the meal or even as a dessert. For dessert you can ad some whipped frosting. The Pumpkin pudding is good alone or with a whipped topping. Can be served as a desert or with the meal.

Pumpkin Bread

Ingredients

3 - cups flour
1 - tsp baking soda
1 - tsp salt
3 - tsp cinnamon
2 - cups sugar
1/2 - cup chopped nuts
4 - eggs, beaten
2 - cups cooked mashed pumpkin
1 1/4 - cups melted shortening

Stir dry ingredients in a large bowl. Form a well in center of the dry ingredients, add beaten eggs, pumpkin, and shortening. Stir well. Pour in 2 well-greased loaf pans.
Bake at 350 degrees for 40-45 minutes.

Pumpkin Pudding

Ingredients
1 - cup sugar
1 - tablespoons oleo
2 - eggs separated
2 - tablespoons flour
3 - cups cooked mashed pumpkin
1 - teaspoon vanilla

Cream the sugar, oleo and egg yolks in a bowl. Add flour, pumpkin and vanilla, mix well. Beat egg whites until stiff, fold into pumpkin mixture. Pour ina 9 inch baking dish.

Bake at 350 degrees for 30 minutes

Note: How to make mashed pumpkin
Half the pumpkin and remove seeds, pulp and stringy parts. Cut into small pieces and peel. Boil for 25 minutes or until tender in lightly salted water. Puree in blender.

A 5 pound pumpkin will make about 4 1/2 cups of mashed, cooked pumpkin. A 15 - 16 ounce can will equal about 2 cups of mashed pumpkin.
