Pumpkin dishes are synonymous with the holidays. If you have a left over pumpking from halloween, you can easily make a pumpkin puree and find the rest of the ingredients in your spice rack.

Ingredients

Serves 12
1 1/2 c sugar
1 c butter, softened
1 1/2 c pumpkin puree
4 eggs
1 tsp vanilla extract
3 1/2 c all-purpose flour
1 tsp baking powder
2 tsp baking soda
1 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp salt
1/2 tsp ground ginger
1/2 tsp ground cloves
1/2 tsp allspice
1 1/2 c chocolate chips

Directions for Pumpkin Chocolate Chip Loaf

Preheat oven to 375 degrees.

Grease two 9x5 loaf pans and set aside.

In large bowl, cream sugar, butter and vanilla extract.

Blend in eggs one at a time.

Slowly blend in pumpkin puree and set aside.

In another bowl, sift together all dry ingredients except chocolate chips.

Slowly add sifted dry ingredients into wet ingredients, combining well with a beater on medium speed.

Add chocolate chips and mix with a wooden spoon.

Bake for 50 minutes at 375 degrees.

Remove from oven and cool on baking rack.

    Lori - I made my own puree for this recipe! SO easy! Just peel off the dark orange shell, cube, boil until tender, strain, let cool and mash with a potato masher or put in a blender. Candice - (great name, BTW) It's a template that AC has.

    Now that sounds good. Unfortunately, they do not sell pie ingredients over here so I will have to go buy a pumpkin and make my own puree. could be interesting. HA!
