Pumpkin Gem Cupcakes

These delicious pumpkin cupcakes are the perfect dessert for any autumn party. Canned frosting and a boxed cake mix make this recipe simple to put together. The moist and tender mini-muffin makes a convenient grab-and-go package that is sure to be a hit at hayrack rides, wienie roasts, halloween bashes, and thanksgiving dessert tables. You will find yourself reaching for this easy recipe again and again.

Ingredients:

1 can (15 ounces) solid-pack pumpkin

3 eggs

½ cup vegetable oil

2 teaspoons ground cinnamon

1 teaspoon baking soda

1 package (18 ¼ ounce) yellow cake mix

1 to 2 cans ( or homemade) cream cheese frosting

Preheat oven to 350 degrees. In medium mixing bowl, combine pumpkin, eggs, oil, cinnamon, and baking soda. Add cake mix; beat on low speed for 1 minute to combine. Beat on high speed for 2 minutes.

Fill paper lined mini-muffin cups two-thirds full. Bake at 350 degrees for 12-16 minutes or until a toothpick comes out clean. Cool 5 minutes before removing from pans to a wire rack and cooling completely. Spread with cream cheese frosting. Decorate with candy pumpkins.

    I love pumpkin-flavored anything. That's convenient that you just mix it with a box of cake mix, rather than measuring out ingredients.
