Pumpkin Ring: Delicious, Simple Recipe

Serve as Breakfast Food or Dessert

Karen LoBello
I enjoy serving appealing dishes to my guests; however, I surely wouldn't say that baking is my forté. So I'm always on the lookout for a recipe that is simple, yet tastes good. This pumpkin ring recipe was handed down to me from my mother, who had no doubt gotten it from another family member. It is simple to prepare and is always a hit, especially in the fall. The best part of this pumpkin ring is that it's very moist. For those who love whipped cream or Cool Whip, add a dollop on top for a nice finishing touch. Freeze the leftovers and enjoy them another day.

Recipe:

Pumpkin Ring Ingredients
3 cups Bisquick (original or reduced fat) baking mix
1 cup granulated sugar
1 cup packed brown sugar
¼ cup softened margarine
4 eggs
1 can pumpkin (16 ounces)
2½ teaspoons pumpkin pie spice
¼ cup milk

Glaze Ingredients
(Beat together when pumpkin ring is cool.)
1½ cups powdered sugar
1½ tablespoons milk
1 teaspoon vanilla

Pumpkin Ring Directions
Heat oven to 350°.
Grease and flour a bundt or angel-food cake pan.
Beat all ingredients (except glaze) on low speed for 30 seconds.
Beat on medium speed for 3 minutes.
Spread in pan.
Bake for 50 minutes.
Cool for 10 minutes.
Remove from pan, cool completely, drizzle with glaze.
