This is a basic Pumpkin Soup Recipe that even a toddler will love! While there's some prep time involved, many corners can be cut.

Ingredients

Serves 12
8 cups Chicken Broth
2 tsp Salt
5-1/3 cups Pumpkin Puree or Canned Pumpkin
1-1/4 tsp Dry Parsley
1-1/3 cup Chopped Onion
3/4 tsp Thyme
3 cloves Chopped Garlic
1 Tbsp Black Pepper
1/2 tsp Nutmeg
1/2 tsp Coriander

Combine the chicken broth, salt and pumpkin puree in a medium soup pot and bring to a boil, mixing often.

Add the Parsley, Onion, Thyme and Chopped Garlic to the mixture and reduce heat to a simmer. Add the remaining ingredients and simmer the soup for 45 minutes.

Approximately one cup at a time, process the pumpkin soup in a blender or food processor until it is smooth. Strain each processed amount through a colander.

Simmer the mixture for an additional 15 minutes, and serve garnished with a sprig of fresh parsley.
Tip
Add whole milk to the soup to create a creamier, more decadent tasting soup. Pumpkin soup is the ideal accompaniment to a snowy winter day and a warm fireplace.
