Pumpkin Spice Cake - a Perfect End to Thanksgiving Dinner

Impress your guests this year with an absolutely delicious pumpkin spice cake. This recipe will be sure to take the place of the traditional pumpkin pie for you and your family this Halloween and Thanksgiving. Simply Delicious!

Pumpkin Spice Cake Ingredients:
1 can pumpkin puree (15 ounce)
1 can evaporated milk (15 ounce)
3 eggs
1 cup white sugar
½ tsp nutmeg
1-1/2 tsp ground cinnamon
¼ tsp ground cloves
1 package spice cake mix (18.25 ounce)
1 cup melted butter
1 cup of pecan crumbs

Pumpkin Spice Cake Icing Ingredients:
¾ cup confectioner sugar
1-1/4 tbsp milk
1/8 tsp salt
½ tsp cinnamon
1/8 tsp vanilla extract
½ tsp butter, melted

Pumpkin Spice Cake Directions:
Set oven to 350
Grease 2-9" cake pans
Mix together the pumpkin, milk, eggs, sugar and spices into a large bowl and beat until mixed very well.
Pour the mixture into both cake pans equally.
Take the dry spice cake mix and sprinkle it over the top of the two pumpkin cake mixes and then drizzle with the melted butter. Top with the pecan crumbs.
Bake the two cakes in the center of the preheated oven for 1 hour. Be sure to check your cake by inserting a tooth pick and making sure it comes out clean to ensure that it is cooked all the way through.
Let the pumpkin spice cake cool for approximately 30-46 minutes
Drizzle the vanilla icing on top of the pumpkin spice cake

Pumpkin Spice Cake Vanilla Icing Directions:
Combine all of the ingredients and mix until creamy.

*If possible make this cake a day before, as the spices liven up after approximately 24 hours.

    This is an awesome recipe and the icing sounds like it's to die for. Better make extra! LOL My bday is on/near Thanksgiving, so this will be perfect for my cake instead of pumpkin pie (for a change!)
