Yesterday, I was organizing my kitchen when I came across my recipe box. I noticed a bunch of recipes that needed to be written onto recipe cards and put into the box. So as I'm writing up recipes and organizing the box, I come across this recipe called "Peanutty Chicken". Anyone who knows me knows that I LOVE PEANUT BUTTER. My mouth began to water as I read the title. I read the recipe and it seemed really easy. I had everything in my dwindling cupboards, so I decided to make it for dinner that night.
Here is the recipe, then I will review every aspect of it.
Peanutty Chicken Recipe
1/2 cup Creamy Peanut Butter
1/3 cup Honey
1/4 cup Soy Sauce
3 Tablespoons Vegetable Oil
1 Garlic Clove, minced
1 teaspoon Curry Powder
2 1/2 lbs of Chicken
Step One: If your chicken is frozen, you must thaw your chicken in the refrigerator. Make sure that it is completely thawed!
Step Two: Mix together all of the ingredients well (Creamy peanut butter, honey, soy sauce, vegetable oil, minced garlic clove, & curry powder) except the chicken.
Step Three: Place the mixture into a one gallon plastic zipper bag (If you don't have a zipper bag, place mixture in a large bowl).
Step Four: Add Chicken and mix well until all chicken is coated.
Step Five: Refrigerate chicken and mixture for two hours. After one hour, mix up the chicken again.
Step Six: Preheat oven to 375 degrees.
Step Seven: Pull chicken out of mixture and place in a single layer into an ungreased 9x13 glass baking dish.
Step Eight: Bake chicken uncovered for 35-45 minutes or until the juices run clear.
Recipe makes 6-8 servings.
Okay, I have to tell you, when I put the soy sauce into the mixture with the peanut butter and honey, I seriously thought it was going to be completely disgusting. Once I began to mix all of the ingredients, the aromas were fantastic! I started to get excited about this dish! Now when the chicken was coated, it looked kinda gross. My son took one look at it and said that it looked like it was covered in chocolate, and he was right. It did look like that!
As it baked, the smells coming from the kitchen were mouth watering! I had never wanted that cook time to be done so much in my life! I couldn't resist, I took a peek at what it looked like as it was almost done cooking and it looked delicious!
I served this chicken with rice and corn on the cob. You could use whole chicken breasts, as I did, or cut up chicken breasts and even spoon it over rice or just eat it that way.
The taste.....people, the taste was wonderful! The chicken was so juicy and the flavor of the marinate was wonderful. I wish I had poured the extra marinate over the chicken when I had put it into bake, because I would have liked a little more flavor. Some of the flavor naturally cooks out, but it was still a fantastic dish that was so easy! Easy is my best friend!
