Low Calorie Chicken with Savory Sauce

A delicious chicken recipe with a savory sauce that includes Swiss cheese, it is low in calories and is ready to eat in less than 20 minutes. This recipe can be increased as much as needed for any number of guests.

8 ounces diced cooked chicken
1 cup fresh or frozen peas, blanched
1 cup diced cooked carrots
1 can 14 oz. Swanson Chicken broth
2 ½ Tablespoons butter or margarine
2 Tablespoons flour
2 ounces Swiss

You can use pre-cooked chicken, leftover roasted chicken , or cook fresh diced chicken over medium heat for 8 to 10 minutes or until light brown.

In a medium saucepan heat butter until bubbly, whisk in flour until combined, gradually whisk in broth and continue to cook over medium heat until thickened . The result should be a thin to medium sauce, if too thick, add a little more broth; season with white pepper. Stir in the Swiss cheese, add the chicken, peas and carrots and simmer for about 5 minutes.

Serves 4 - Approximately 275 calories per serving

Serve warm with brown rice, angel hair pasta or mashed potatoes.
