What You'll Need:
Parchment Paper
Mini or small cookie cutters in basic shape (round, square, diamond)
Cookie Sheet (s)
flour
1 /2 lb. Brie cheese
Apricot Preserves
Croissant dough, 1 vacuum tube
Instructions: Line the cookie sheet(s) with parchment, and preheat the oven per instructions on the back of the croissant dough tube. Lightly flour a flat, dry surface. Open dough tube per instructions, and roll out dough onto floured surface. Using cookie cutters, cut croissant dough into small shapes and place ½ inch apart on cookie sheets. Place a small dollop, about 1/ 2 tsp., of Brie on each piece of dough, and flatten lightly. Top with 1/ 4 tsp. Preserves. Bake until dough has risen and is golden brown, usually about 15 minutes. Check at 10 minutes to make sure the edges are not burning. Remove from oven and allow to cool before moving appetizers to a plate for presentation.
