Quick Dinner Recipe: Jimmy Dean Sausage, Celery and Rice Mix-Up
For Those Nights when Everybody is Running, Here is an Easy and Inexpensive Recipe for a Decent Dinner
Here is an easy recipe to help feed the kids, and still get out the door on time.
Serving Size: 4
Ingredients:
Jimmy Dean Sausage Roll, I like the country one
Celery stalks - 4 - 8 of them, the more the better
Bag of Carolina Chicken Rice and Vermicelli Mix
1 Tablespoon Olive Oil
1-2/3 cup Water or Low Salt Chicken Broth
1 Tablespoon Margerine
Pepper
1. First wash the celery and slice it up into bite sized pieces, each about a half inch long. Set aside. (2 mins)
2. Next, stir fry the meat with a little olive oil until it mostly cooked or throw it into a glass bowl, put a towel on top, and microwave it for 2.5 - 3 minutes stirring occassionaly, and set aside.
3. While that is cooking, prepare to make the rice. (If you are looking for a low salt diet, you can make white rice with water and no margerine). In our house, we like to to use the Carolina Rice and Vermicelli Mix that adds additional seasonings, adding a pat of margerine, and substituting a can of chicken broth for the water. Stir it periodically until it boils (2-3 minutes).
4. When rice is boiling, add the Jimmy Dean sausage and the celery, and turn the pan to low. Stir it, and then cover it and let it be Set the timer for twenty minutes and you are off.
Now you can run around the house: make sure the kids are ready, check the answering machine, check the mail, pay the bills, and start your list for next weeks grocery shopping expedition, call your mom, call the kid's dad, and/or fold laundry. The hard work for dinner is done.
When the timer goes off, stir again before serving and add pepper to taste.
