Quick and Easy Chicken Divan

This is a recipe I've had for over 15 years that has been reworked to accommodate a healthier lifestyle. Feel free to tweak further (i.e. low sodium or low fat) for those with specific dietary needs.

My children loved this meal, and so did I, because it was an "easy to make - easy to clean" dish.

¡Buen Provecho!

2 pkgs. Organic frozen broccoli spears (10oz each) OR Organic fresh (semi-cooked) broccoli
5 large Free-range chicken cutlets
1 can Organic Cream of Chicken soup (Health Valley is one brand)
1/2 cup Organic mayonnaise (Spectrum is one brand)
1/2 tsp. Organic Curry powder
1/2 tsp. Organic lemon (squeeze juice from lemon)
10 oz. Organic Sharp Cheddar cheese (Organic Valley is one brand)

Organic Corn Flakes - Crushed (take a portion of corn flakes and crush them to create the crumbs)

Place broccoli spears on bottom of largest size Pyrex pan
Cut cutlets in half and place flat on top of broccoli
Mix soup, mayo, curry powder, and lemon juice.
Pour over chicken and broccoli.
Top with Corn Flake Crumbs.
Grate Cheddar Cheese over all.

Bake at 350 degrees for 1 1/2 hours. (Check after 1 1/4 hours, it may be ready)

Serve over Rice Pilaf or any rice dish (serves 5)
