Smothered Fried Chicken, Delicious Deviled Eggs and English Pea Salad

Easter is a day to spend with family and friends, not in the kitchen working and slaving over a hot stove to prepare your Easter dinner. This Easter dinner is quick and easy. Prepare ahead and take it with you on that Easter egg hunt or take this quick and easy Easter dinner outdoors and have a picnic. Serve it up hot and fresh at the dinner table, the choice is up to you. These all time quick and easy favorites will please all of your Easter guests.

Quick and Easy Easter Dinner Main Dish
Smothered Fried Chicken

1 cut up chicken
1 cup seasoned flour
cooking oil

To season the flour: Put the one cup of flour into a medium size bowl. Add 1 teaspoon salt and 1 teaspoon black pepper. Mix well.

Pour about one inch of cooking oil into a frying pan. Place on medium heat and let the oil get hot.

Rinse the chicken pieces thoroughly, don't dry, immediately dredge the wet chicken pieces with the seasoned flour, making sure to coat evenly. If a crispier chicken is desired, lightly moisten the chicken again and dredge in flour once more. Carefully place the coated chicken into your hot oil. Repeat this process until all chicken pieces have been coated.

Reduce heat to low, cover the frying chicken in the pan with a lid and cook for five minutes. Remove the lid (careful of the steam) and turn the chicken over and replace the lid, fry another five minutes. Repeat this process until the smothered fried chicken has cooked for 20 minutes or as long as it takes for the juices to run clear, when the chicken is pricked with a fork. (10 minutes on each side)

Delicious Deviled Eggs

6 boiled eggs
1 strip cooked, finely, crumbled bacon
1/2 teaspoon diced onion
1/2 teaspoon pickle relish
1 teaspoon Miracle Whip
1/4 teaspoon mustard
1/2 teaspoon sugar
a dash of lemon pepper
a dash of Cajun seasoning

Peel the boiled eggs, this is the first step to your delicious deviled eggs. Slice in half long ways. Dip out the yellow and place into a mixing bowl. Reserve the egg white, this will be the "bowl" for your deviled eggs. Once you have dipped out the yellow from all of your eggs then take a fork and mash them, like you would potatoes for mashed potatoes. You want the "filling" for your deviled eggs to be creamy.

Next add your ingredients to the mashed eggs. The bacon, onion, pickle relish, Miracle Whip, mustard, sugar and lemon pepper. Mix until creamy. The mixture will be lumpy of course, just make sure that the eggs are mixed really well with the moist ingredients. This is a crucial step for delicious deviled eggs.

Dip the egg mixture by the spoonful and put into the egg white space, that was created when you removed the yolk. Try to make them look pretty, not messy. The appealing look is very important to deviled eggs. The look and taste go hand in hand. Sprinkle lightly with the Cajun seasoning.

Quick and Easy Easter Dinner Side Dish
English Pea Salad

3 cans English peas (drained)
1/8 cup chopped onion
1/8 cup shredded cheese
1/8 cup diced ham
1 tablespoon diced pimento
1 tablespoon pickle relish
2 boiled eggs (chopped)
3 tablespoons salad dressing
2 teaspoons sugar
dash of lemon pepper seasoning

Mix all of the ingredients, except for the English peas. Once the other ingredients are mixed thoroughly, gently fold in the peas.
