Growing up in Texas, there is a large German influence in the state and I have always loved German food. I am always on the lookout for great Oktoberfest recipes.
In today's busy times, however, it is not easy to find the time to prepare a German feast. It is, however possible to take a few shortcuts and still have a genuine German meal to celebrate Oktoberfest.
I have compiled a menu from my own personal Oktoberfest recipes to help you celebrate your own German Oktoberfest and really enjoy the celebration without the hassle.
Braised Bratwurst
Ingredients:
2 lbs bratwurst of your choice
4 bottles German lager beer
1 lg onion (diced)
2 green apples peeled, cored, and sliced
1 can sauerkraut (drained)
Directions:
Heat beer, onions, apples, and sauerkraut to boiling point. Lower heat to a simmer. Add bratwurst and simmer until heated through. Remove brats and grill for 2-3 minutes until golden brown. Using a slotted spoon, remove apples, sauerkraut, and onion and place on a plate. Serve brats on top.
German Potato Salad
Ingredients:
3 lbs red potatoes
½ cup chopped onion
2 tsp salt
½ cup mayo
¼ cup vegetable oil
½ cup apple cider vinegar
2 tbsp sugar
2 tbsp parsley
1 tbsp dill
Black Pepper to taste
Directions:
Peel and cut potatoes into cubes. Put potatoes in a large pot and cover with water. Bring to a rolling boil and cook until potatoes are cooked all the way through. (Test with a fork. If potato falls apart, they are cooked)
While potatoes are cooking, add all other ingredients together in a large bowl mix well with a whisk.
When potatoes are done, drain and put back into cooking pot. Pour mixture over potatoes while they are still hot. Stir until all potatoes are completely covered in sauce. Let set for at least an hour before serving. Serve warm.
Quick Cherry Strudels
Ingredients:
2 cans cherry pie filling (or filling of your choice)
1 egg (beaten)
1/3 cup sugar
Egg roll wrappers
Vanilla ice cream or whipped cream
Directions:
Lay egg roll wrappers flat and using a tablespoon, spoon cherry filling into the middle of the egg roll wrapper. Do not over fill. Fold bottom half over filling, fold in sides, and then roll up until completely sealed. Use a bit of the beaten egg to help seal. Brush egg over wrapper and sprinkle with sugar. When all of the strudels are wrapped, bake on a lightly greased cookie sheet on 350 degree oven for about 10-15 minutes until golden. Serve warm with ice cream or whipped cream.
