Quick, Easy, and Healthy Recipes for on the Go Snacking

Because I am constantly on the go I have found a need to keep healthy and nutritional snacks with in arms reach no matter where I am so that I can fight the urge to grab something high in calories, sugar, or fat just because it is more convenient. The following recipes are some of my favorites; each is quick and easy to prepare with no cooking or baking involved and can be carried in plastic sandwich bags, or better yet, reusable containers. And with the exception of the Frozen Grahamwiches non of these recipes needs to be kept in the refriderator or freezer. The grahamwiches should be kept frozen until you are ready to eat them. Nutritional information follows each recipe.

Trail Mix

1 Serving

20 almonds
1 oz raisins
0.5 oz dark chocolate chips

Combine. Eat.

PB&J Roll-Ups

1 serving
1 whole-wheat tortilla
1 ½ tablespoons no sugar added peanut butter
1 tablespoon 100% strawberry all-fruit spread (or other flavor)

Spread peanut butter evenly over tortilla. Then spread strawberry all-fruit or flavor of choosing on top of peanut butter. Roll into tube and slice into 8 pieces.

Candied Almonds

1 serving

20 almonds
1 teaspoon cinnamon
1 packet splenda

I Can't Believe It's Not Butter Spray

Place almonds in single layer on non-stick pan. Spritz 5 times with I Can't Believe It's Not Butter Spray. Stir. Spritz another 5 times. Add the cinnamon and splenda. Stir. Spritz 5 times with spray. Stir. Spritz 5 times with spray. Stir until evenly coated.

Frozen Grahamwiches

8 servings

1/2 cup strawberry nonfat yogurt
1/2 cup thawed Cool Whip Lite
8 Honey Maid Low Fat Cinnamon Graham crackers (broken in half to make 16)

Mix the 1/2 cup strawberry yogurt with the 1/2 cup Cool Whip Lite topping - mix until well blended.

Spoon topping evenly onto 8 of the graham cracker squares. Top each with the remaining 8 squares and press gently together.

Place the grahamwiches in a shallow baking dish and cover with foil.

Freeze for 1-2 hours or until frozen and transfer to an airtight container. Grahamwiches can be stored in the freezer up to 2 weeks.
