Quick and Easy Holiday Appetizer: Festive Baked Frittata

Every once in a while, it's fun to try new things. So, after hearing about this omelet style dish called a frittata, I decided to try my hand at one for a sales party I was throwing. You know, it was pretty tasty. The best thing is, it's quick, simple and easy too!

You'll need (and this is all pretty much to taste, so get creative with your amounts!)

1.5 cups shredded medium cheddar cheese (you can do cubed as well, but shredded works better to "mix")

1 can diced tomatoes (use the kind with chilies for an extra zip!)

1.5 cups fresh spinach, shredded (used canned if you like, it's not bad-i just prefer fresh because it gives it a lighter flavor!)

five large eggs

(optional) one quarter cup milk to mix with the eggs to help them blend

Preheat your oven to 325 degrees. Mix your eggs (and optional milk!) together. Add the cheese and stir around a bit. Then add the spinach and stir a bit more (not a lot, you don't want to bruise the spinach if it is fresh). Then you pour that mixture into a well sprayed round cake pan and lastly (RIGHT BEFORE IT GOES INTO THE OVEN!!!!!!!!!!!!!!), drain your diced tomatoes and add them (stir just a tiny bit to move the tomatoes out and around) You will need to cook it about twenty minutes (maybe longer, depending on how dense it i with the toppings) until it is firm, like and omelet should be.
