Quick and Easy Macaroni Salad Recipe: the Best You Have Ever Tasted!

Traditional Macaroni Salad with No Chopping

Here in the South, macaroni salad is as much a part of our culture as any food. It appears at family dinners, picnics, funerals, and office luncheons. We are not talking about pasta salad here. This macaroni salad recipe is the traditional Southern- type salad, but the great thing is there is no chopping! You can make this in no time, and the dressing is wonderful. People will be asking for you to make it again, I guarantee. Just don't tell them how easy it actually is.

Ingredients:

1 box elbow macaroni
1 bag frozen mirapoix vegetables
1 bag frozen green, yellow, and red peppers
1 cup mayonnaise (Start with one cup of mayonnaise, but you may later need to add a few tablespoons extra a little at a time.)
2 Tablespoons mustard
2 Tablespoons apple cider vinegar
2 Tablespoons sugar
salt, pepper, paprika
: small amounts

Instructions:

1. Boil the macaroni.
2. Drain the excess water off and add the frozen vegetables.
3. Let stand, stirring occasionally as the vegetables thaw.
4. In a separate bowl, mix the remaining ingredients.
5. Drain any water off of the macaroni and add the dressing.
6. This salad will have a pinkish color, but if you need to add a little more mayonnaise, you can do that a little at a time.
7. Sprinkle with paprika across the top.

Remember, don't diminish the dishes that you prepare by "telling" your culinary secrets!

    Another excellent recipe. I already prepare macaroni salad close to this, but the vegetables really add to this recipe. Also, the sugar (or sweet 'n low) adds balance and zip to the flavor.
