1 medium potato, diced
1 small sweet pepper, diced
1/2 medium onion, diced
1/4 lb sausage or bacon
1 egg
1 oz shredded cheese for topping

Dice a medium sized potato, as well as a small sweet pepper and small onion. Place all three in a hot skillet with just a little oil. You can also add a few pieces of bacon, quarter pound of sausage or a few breakfast sausage links, or even some leftover diced ham. While this is cooking crack an egg in a bowl, quickly scramble and pour over the almost cooked potato mixture. With diced pieces it cooks much faster, taking less time in the morning. You can add spices, black pepper, a little salt or other items to taste. This makes it easy to use odd bits of leftovers. When the entire ingredient list is cooked simply put into a bowl, top with a little cheese and go. Usually the potatoes take the longest but if diced or shredded they cook faster. The combination of ingredients offer a great source of potassium (potatoes), protein and the packed nutrition in peppers and onions while being a tasty, quick and easy meal to fix when time is short.
