Quick and Easy Pumpkin Chocolate Chip Cookie Recipe

Delight your children's senses this fall with these quick and easy pumpkin chocolate chip cookies. They will love bringing these sweet little treats to school for sharing with friends or using as a bargaining tool with their least favorite teacher.

This pumpkin chocolate chip cookie recipe is super easy to prepare, so get the kids involved in making them, too. The cookies only require a few minutes to bake and they taste so good, everyone will beg for the recipe.

Ingredients:

1 cup pureed pumpkin
1 egg
1/4 cup butter or margarine
1 box yellow cake mix
1 tablespoon pumpkin pie spice
1/2 cup chocolate chips

Pour the pumpkin, egg and butter into a medium mixing bowl. Use an electric mixer to stir the ingredients together until the mixture is light and fluffy.

Add yellow mix and pumpkin pie spice to the mixture and blend on high speed to combine the dry ingredients.

Pour the chocolate chips into the bowl and gently fold them into the pumpkin cookie dough using a spatula or flat wooden spoon.

Use a teaspoon or small melon baler to drop the dough on to the cookie sheet. Bake the cookies at 350 degrees Fahrenheit for 10 to 12 minutes.

** Experiment with new textures and flavors! Try adding raisins, dried fruit and/or chopped walnuts, pecans or even cashews in your pumpkin chocolate chip cookie recipe.
