Here are the things that you need;
2 cup of all purpose flour ( do not use self-raising one)
1/2 cup of cocoa powder
1 cup of light brown sugar ( firmly packed)
1/2 cup of cooking chocolate (chopped and melted)
1 cup of vegetable oil (corn oil, sunflower oil, palm oil or other)
1/2 cup of low fat milk ( or skimmed milk)
2 tablespoon of golden syrup
1 tablespoon of white vinegar
1 tablespoon of vanilla essence
2 eggs
1 cup of chopped walnuts (you can substitute it with any of your favourite nuts)
A pinch of salt
Brownie baking pan
Method
Put all the dry ingredients such as flour, sugar, cocoa powder and salt, into a bowl. You need a big mixing bowl for this job. Melt the chocolate and let it cool for a while. Do not let it set. In a separate bowl, put all the wet ingredients together. Make sure to beat the eggs with fork lightly before adding to the wet ingredient bowl. Mix to blend. Then, quickly pour the wet ingredient into the dry one. By using a hand beater, mix all the ingredients until incorporated. Put in the nuts and mix again. Try not to over mixed it. If the batter is a bit tough, you may add one or two tablespoons of liquid, it can be milk or plain water. The batter should be a bit runny. Pour the batter into a prepared brownie baking pan. Give a good smack at the bottom of the pan. Or simply drop it onto the kitchen counter, the bottom first, of course ( the children love doing this). This is to eliminate air bubbles.
Bake at 180C in a preheated oven for 30 minutes or less. Do not over baked it. This recipe is not suitable for microwave.
For garnishing, pour melted chocolate over cake and sprinkle some chopped nuts. this recipe is just nice for family of five. You may double the recipe according to the number of people. Enjoy!
