Quick and Easy Refreshing Lemon Cake with Cool Whip Topping Recipe

Are you craving something sweet and refreshing after that heavy summer meal? Why not just whip up a cake and your favorite fruit along with whipped topping. This is one I whipped up when having one of those spur of the moment "I want something light and sweet" cravings.

As Alban Mehling always writes, "before you begin, roll up your sleeves, remove all watches and rings, wash your hands and let's get ready to cook."

Ingredients

3 Eggs
1 1/3 cup of water
1/3 cup of Canola or Vegetable Oil
I Box of Lemon Cake Mix (Your Preferred Brand)
I Tub of Cool Whip Topping (Defrosted)
(Canned or frozen fruit of your choice)

Directions

Prepare the cake mix according to directions on the box. Bake at 350 degrees or if using a dark pan bake at 325 degrees for 30 minutes. When cool, remove from cake pan and place in a cake dish.

Spoon the whipped topping on your cake after cooling or when serving. For an extra special treat, cut a slice of cake into one inch squares. Place the cake squares in a serving dish, place cooling whip on top and garnish with the fruit of your choice. Strawberries, oranges, peaches, even blueberries make a great looking and tasting compliment to this cake.

Add a glass of ice cold water, sparkling water or cold milk and enjoy!
