Quick and Easy Salad Recipe: Multi-color Pasta Salad with No Chopping!

Most of us are packing lunches instead of buying now, at least most of the time. Don't you hate having to make a sandwich to pack? And, then it is less than inspiring when you meet it again for lunch! There is something quite satisfying to me about a container of colorful pasta salad. You don't have to heat it up, and it fills you up, too! I particularly love the multi-color kind made out of vegetables. My daughter likes this kind of pasta salad because it uses healthier ingredients instead of the traditional mayonnaise.

I love a good vegetable-packed macaroni salad, but this salad is much faster and easier to make. The only vegetables are in the pasta and the ones I add from little fifty cent dried spices. You can get these at Walmart or any Dollar Store of any type. You can whip this up quickly the night before and have lunch all done for everyone.

Ingredients:
One 13 ounce box of Multi-colored spiral Pasta
1/4 cup of red wine vinegar
1/8 cup of olive oil
2 Tablespoons dried minced onions
1/2 Tablespoon garlic powder
1/2 Tablespoon parsley
1 Tablespoon sugar
Salt and pepper
Grated Parmesan, as desired

Instructions:

Boil Pasta and drain.

Run cool water over it to cool.

In a separate bowl, mix oil, sugar, vinegar and spices.

Mix with pasta until well-coated.

Sprinkle with Parmesan cheese, and stir.

Sprinkle the top with Parmesan, salt and pepper.

Cover and Refrigerate.
