Quick and Easy Valentines Day Baked Chicken Dinner Recipes to Wow Your Girlfriend

Ok guys, take it from a girl who loves to cook (and experiment with food); who also knows the importance of romance, especially on Valentines Day. I want to let you in on some little recipe secrets. There are many different ways to cook chicken, but you want to be exotic and romantic about it. She will love this more then a night on the town.

Chicken is one of the least expensive meats that you can purchase. Not only that, you can do just about anything with chicken. From baking to grilling and frying, there is always something that you can make to please the chicken lover in your life. Since we want to set the mood to light and romantic, we are eliminating frying the chicken. Then for the most part, when you think romantic, you usually think something flavorful and much to savor. With that in mind, we are skiping grilled chicken as well. This leaves us with baked chicken recipes.

Meditterranean Chicken

2 large boneless, skinless chicken breasts (rinse in COLD water), chunked

2 large tomatoes, chunked

1/4 cup of olive oil

3 cloves of garlic, minced

1/2 tsp. salt

1/4 tsp. oregano

lemon pepper to taste

3/4 cup of feta cheese

1 lb. linguine noodles

2 tbs olive oil for noodles

**chunked means cut in large pieces**

Preheat the oven to 425. Bring a large pot of water to boil. In a glass baking dish bring together the chicken, chunked tomatoe, olive oil, minced garlic, lemon pepper and oregano.

Bake the chicken for about 8-10 minutes. Remove from oven and stir, then bake for about 3-5 more minutes.

Add linguine and 2 tbs olive oil to the boiling pot of water. Cook according to the package (usually boil for about 10 minutes).

Rinse the linguine in warm water. Serve the Meditteranean chicken over the pasta. Top with cheese.

You can buy a nice baguette or French bread to serve with it. Enjoy a glass of refreshing lemon iced tea with it.

Total preparation and cooking time: about 20-25 minutes. Serves 2

El Ranchero Chicken Bake

3 boneless, skinless chicken breast rinsed in COLD water

12 ounce jar of your favorite salsa

1 large red bell pepper

1 tbs ground cumin

1 tbs lemon juice

1 tbs chili powder

2 cloves garlic, crushed

15 ounce can of black beans, rinsed and drained

Preheat the over to about 400 degrees. Place chicken breasts in a casserole dish. In a bowl, combine the salsa, red bell pepper, cumin, lemon juice, chili powder and the garlic. Pour the mixture over the chicken, then the black beans and cover with foil. Bake for 1 to 1 1/2 hours. Serve over rice and top with cheese, if you want.

Total preparation and cooking time: about 2 hours. Serves 2

Italian Honey Mustard Chicken Bake

2 boneless, skinless chicken breats rinsed in COLD water

1/3 cup of Italian dressing

1 clove of garlic, pressed

1/2 tbs mustard powder

1/2 tbs honey

salt

Preheat the oven to 400 degrees. Place the chicken in a small (9X9) casserole dish. Mix all of the other ingredients together and pour over the chicken. Cover the casserole and bake for about 45 minutes or until chicken is white throughout.

This is delicious with Au Gratin potatoes and serves just you and your baby :). You may even try it with a nice Ceaser salad. You can buy pre packaged Ceasar salad at the grocery store. Make sure to pick up some Feta cheese, croutons and Ceasar salad dressing to go with the salad.

Total preparation and cook time: Approx an hour.

Simple Lemon Peppered Chicken

2 boneless, skinless chicken breasts (rinsed in COLD water)

1 tbsp. lemon juice

2 tbsp. canola oil

salt

lemon pepper

parsley flakes

Preheat over to 350. Rub the chicken with lemon pepper. You can seal the flavor by searing the breasts in a lightly oiled (use canola or olive oil) frying pan. All you do is heat the oil and after rubbing the lemon pepper all over the chicken, lightly sear both side. Searing time should be about 5-10 seconds.

Mix the Canola oil, salt, and lemon juice together and after placing the breasts in the casserole, you can pour the concoction over the chicken. Bake for about 45 minutes. Sprinkle the top with parsley. Serve this with rice and a steamed vegetable.

See there, now was this so hard? There are many more to choose from, but we thought that these baked chicken recipe choices are simple and delicious enough to wow your girlfriend, on Valentines Day.
