Quick & Elegant Kahlua Rice Pudding!

2 cups Half & Half

1 cup Kahlua (or other Coffee Liqueur)

1/3 cup Superfine Sugar

1/4 teaspoon Salt

1 teaspoon Cinnamon Sugar, Plus a little for garnish

1 1/2 cup Quick-Cooking Rice

Whipped Cream

Wash rice thoroughly. Heat half & half, Kahlua, superfine sugar, salt and ground cinnamon. Bring mixture to a boil then add quick cooking rice. Cover; and reduce heat to simmer for about 15 minutes or till liquid is absorbed, stirring occasionally. Serve in a dessert dish and garnish with whipped cream and cinnamon sugar.

Served hot or cold.

    Deana, put the Kahlua in at the very end and it will hold one to the kick! They will sleep like babys!
