Quick and Healthy Happy Lunch for Your Kids

Lunch Suggestion for the Kids

Suddenly the kids are home from school and clamoring for lunch! You are caught off guard and don't want to resort to hot dogs, at least not yet. There's plenty of time for hot dogs and cook out leftovers later in the summer. This is an easy lunch that is nutritious, too.

Ingredients:

1 Apple

2 tablespoons Peanut Butter, Hummus or cottage cheese

1 tablespoon Raisins

1 tablespoon Wheat Germ

Slice your apple in half and core out the seeds, then slice into 'dippable' wedges. The wedges will make your eyes, nose and mouth. For the first part of the nose, add the Peanut Butter, which is full of protein, to the center of your plate. You can also use hummus as a great change of pace if you have it on hand, or cottage cheese in case you have a nut allergy in your home. Add the raisins to the nose and sprinkle with wheat germ. You can also mix in the wheat germ, which in our house we call wheat sprinkles to avoid a long-winded explanation on how wheat germ is not dirty. Wheat germ is the inner part of the wheat kernel that is discarded when white flour is made. It packs a powerful punch of nutrition including vitamin E, folate, thiamin, zinc and magnesium. I place half an apple slice in the nose and you're done! A fun and nutritious meal that the kids will love!
